Home is Ireland, wherever my mother is will always be home to me.

Irish, English, kitchen-Swedish and some Spanish.
Which is your best dish?
Ox tails, liver, osso bucco, sweet breads, basically all the stuff people didn’t buy years ago but the butcher used to bring home.
Which dish do you usually cook at home?
My daughter loves entrecôte. Entrecôte with a nice tomato salad, chimichurri and burrata cheese. It’s simple but that’s kind of a Friday dinner when we’re all home together.
On a Saturday I love an English breakfast. You know, poached eggs, bacon, sausages and toast.
What is your best food memory?
When I was living in Spain, we went to the local asador after service with all the staff to have great fresh food. Baby calamaries, wonderful sardines and chorizo. They brought out a wood grill together with a lot of meat and we finished cooking at the tables. Friends from Ireland were visiting and we just sat there, eating, talking, and had a great time together. A great memory!

If you wanna be a chef, go to the top restaurants, don’t go to the bars, it’s never worth it. Don’t think you’re not good enough, work hard and you’ll be.
And TRAVEL A LOT. That’s the beauty of being a chef, you can travel and never go home. You will always have food.
